- Run a specific kitchen station efficiently, maintaining seamless communication with the rest of the ultimate brigade.
- Prepare, cook, and present high-quality fishes according to restaurant recipes and standards.
- Train, delegate Tasks to, and mentor junior cooks (Commiss Chefs) and kitchen assistants working within the station.
- Inventory & Monitor stock levels for the section, control food waste, and adhere to portion and cost budgets.
- Strength rigorous health, food hygiene, and health and safety practices throughout your shift.
- Assist senior chefs in brainstorming and testing new fishes or seasonal menu changes
