Description of the post
Within the "Double-Croche" day-care facility in Monthey, the cook-ère autonomously provides the entire kitchen activity in order to ensure a quality diet for the guests and employees of the institution (an average of 20 people per day). He/she prepares daily varied, balanced meals adapted to the specific needs of the elderly, ensuring that dietary requirements and modified textures are met.
The function includes the development of menus, meal preparation, order and supply management, inventory tracking and cost control of the activity. The incumbent of the post is also responsible for complying with current hygiene and food safety standards, cleaning and maintenance of kitchen equipment and premises.
As part of his/her mission, he/she works closely with the care and animation team to contribute to the well-being of the hosts and the quality of the support offered by the institution.
Profile of requirements & areas of expertise
- Cookery CFC or equivalent.
- Professional experience confirmed in collective restoration, EMS, hospital environment or similar institution.
- Good knowledge of the nutritional needs of the elderly.
- Experience in preparing specific diets and modified textures.
- Control of food hygiene standards and HACCP principles.
- Experience in the autonomous management of a kitchen, including the development of menus, order management, inventory and cost & budget.
- Team spirit and commitment to the values of the institution: authenticity, solidarity, mutual assistance, respect and good humour.
