Role overview

Tasks - Share responsibility for managing the Central Kitchen laboratory - Coordinate the work of assigned detainees and actively participate in detainee training activities (apprenticeships) - Independently execute production cycles according to daily planning - Ensure hygiene and food cleanliness standards according to HACCP company levels and complete required training to acquire relevant safety skills - Participate in organizing internal events and in menu preparation and planning - Guarantee the proper functioning of the laboratory from an economic perspective and be willing to attend professional development courses - Maintain order and safety in the laboratory, collaborating with security personnel - Contribute to the overall smooth operation of the prison facilities and undertake additional tasks as directed by management ## Requirements - General requirements: - Swiss citizenship - Minimum age: 35 years; candidates born in 1991 or earlier are eligible - Federal Certificate of Competence (AFC) as a cook - Additional certifications or diplomas in relevant fields and dietetics may be considered a plus - Several years of proven professional experience - Trainer/mentor certification for apprentices (training master), or willingness to obtain it - Experience in training apprentices is a plus - Possession of category B driving license (manual transmission) - Strong motivation for the work - Physical and psychological requirements: - Good overall health, particularly absence of conditions incompatible with the role of Head Chef - Good physical and stress resilience - Psychological suitability for the role - Flexibility to work split shifts, including weekends and holidays - Skills: - Proficiency in spoken and written Italian and good knowledge of at least one other official language - Adequate computer skills and proficiency in Microsoft Office - Leadership qualities, ability to work independently and in teams - Sense of responsibility, systematic approach, initiative, and strong organizational skills - Interpersonal skills - Reliability, accuracy, impartiality, and discretion - Ability to handle conflict and stressful situations; problem-solving skills - Conduct and background: - Police background check confirming no elements or past convictions incompatible with the Head Chef role, including severity or nature of offenses and recidivism - Good reputation; no conduct incompatible with the role such as dishonorable behavior, violation of societal ethical values, or conflict-prone traits - No ongoing legal proceedings or financial insolvency certificates ## Special Notes - Service location: Lugano-Cadro - Include a copy of your driving license (front/back) with your application ## Application Submission Conditions - Applications must be submitted online.
