Full description
The technologist and milk technologist mainly deal with the transformation of milk into dairy specialties such as cheese and dairy products, consumption milk and dessert. They work milk until they get different dairy specialties such as the vast types of raw or pasteurized milk cheese as well as various dairy products and desserts.
Milk technologists also take on tasks in the field of analysis, quality management, logistics and collaborate on the research and development activities of new products. They use various equipment, appliances and automated industrial plants; they are attentive to the current cleaning and maintenance of the means of production. Good technologists with professionalism and experience take responsibility for the entire production cycle. Every technologist or milk technologist applies to his or her person and to places of production strict hygiene standards, measures concerning safety at work, health and the environment.
Their main tasks can be described as follows
Receiving and storage
- receive milk in the morning and evening: weigh it, filter it, cool it and record the collected data;
- take milk samples, check its quality and draw reports
- Manufacture
- prepare the milk for the different manufactures;
- put into operation the machines for the manufacture, program them and supervise the production chain;
- pack, stock and ship the products;
- participate in the creation of new products
- Hygiene and quality control
- control all production parameters: oversee self-control and collaborate with the laboratory in performing chemical, physical and microbiological analyses of milk, semi-finished or finished products;
- wash and sterilize production lines, plants and manufacturing premises, periodically verify the hygienic state;
- verify the hygiene of the staff.
Training
Duration: 3 years
Basic vocational training (training) in a dairy or in a dairy company and frequency of courses at the vocational school. In Ticino at the School of professional craftsmanship and industrial nature professions (SPAI) at the Centro professionale del verde (CPV) in Mezzana, 1 day a week.
Teaching materials at school: professional knowledge (general processes of milk processing, production of specific dairy products, specific work related to the company or product, hygiene and quality assurance provisions, occupational safety, health and the environment), gymnastics and sports. The person in training also follows the inter-company courses organized by the professional association of category.
At the end of the training, overcoming the qualification procedure (exams), the Federal Certificate of Capacity (AFC) is obtained TECHNOLOGY OF LATTE TECHNOLOGY OF LATTE
