Main responsibilities
- Making courts taking into account HACCP/GHP
- Control of outgoing courts for quality, quantity and presentation taking into account internal company requirements
- monitoring, compliance and, where applicable, Improvement of quality standards
- Management of the kitchen pass at service hours (disposition of courts and management of employees)
- Ensuring proper handling of machinery and equipment
- Ensure the implementation of the hygiene/safety concept in the à la carte or Banquet kitchen
- Incoming goods inspection according to specification
- Calculation and setting of prices for the kitchen offer in consultation with the Executive Chef
